The ultimate ways to enjoy lemons
Trying every possible method to alleviate the irritability caused by hot weather is probably a shared passion during this season. In the office, my colleagues’ appetites at lunchtime have diminished compared to usual. Only during afternoon tea with desserts and cold drinks do they start to revive, and they always invite me to join.
While I am not a big fan of sweets because I find them cloying, I’m always up for anything with citrus flavors.
Lemons are probably the least likely thing to become tiresome. Their pale color paired with a layer of floating ice is visually pleasing and makes me feel refreshed.
With food, drinks, and icy treats all covered, this set is both satisfying and refreshing, cooling your mind and your stomach.
Lemon Soda
1、In a glass, muddle mint leaves, white sugar, and honey. Squeeze in half a lemon’s juice, and add lemon slices.

2、Pour in soda water.

Lemon Waffles
1、Whisk two eggs with 40g of white sugar. Add 12g of lemon juice and 75g of milk, and mix well.

2、Sift 135g of all-purpose flour, add 25g of cornstarch, and 5g of baking powder. Mix into the milk and egg mixture from step 1 until smooth. Add 45g of salad oil and whisk until bubbly. (See the GIF in the next image for the consistency).

3、Grease a waffle iron with butter, pour in the batter, and bake for 6-7 minutes.

Lemon Ice Cream
1、Wash a whole lemon, squeeze out the juice, chop the peel, mix it with the juice, and cook until softened. Add 60g of white sugar until dissolved. Remove and refrigerate.

2、Whisk two egg yolks until thick and creamy. Heat 100g of milk on low heat, and slowly whisk it into the egg yolks.

3、Combine mixtures 1 and 2. Whip 250g of heavy cream until soft peaks form. Gradually add the cream to the egg mixture in three parts, then mix in the lemon mixture and an adequate amount of rum.

4、Cover with plastic wrap and freeze for at least 6 hours. Remove and, if desired, garnish with chocolate.
