Prepare to devour a whole plate of vegetables with this incredibly delicious recipe! This dish features layers of vibrant vegetables like cucumbers, zucchini, eggplant, and tomatoes, arranged in a rainbow-like stack. The natural sweetness of the vegetables, combined with the creamy melted cheese, creates an irresistible charm, so tempting that even your dreams will be filled with its aroma.
This time, I also tackled something I’ve always wanted to try but hadn’t managed yet: “baking” pizza outdoors using only a skillet, without an oven. And it was a success! The cheese melted under the primitive high heat, creating that satisfying stringy texture we all love.

Rainbow Vegetable Stew
1、Dice 400g of peeled and seeded tomatoes into small pieces. Finely chop 1/4 of an onion and 5 cloves of garlic. Dice half a red bell pepper and half a yellow bell pepper.
2、Vegetable Sauce: Over low heat, add 2 tablespoons of olive oil, the chopped onion, and garlic. Stir-fry until fragrant. Add 20 twists of Herbes de Provence (about 2g) and the diced bell peppers. Once softened, add the diced tomatoes, 1 tablespoon of tomato paste, 1/4 teaspoon of salt, and 3 twists of black pepper (about 1g). Continue to simmer for about 20 minutes.

3、Vegetable Slices: Thinly slice 1 green zucchini, 1 yellow zucchini, 1 regular zucchini, 1 long eggplant, and 3 tomatoes into 2mm thick slices.

4、Spread the vegetable sauce evenly on the bottom of a skillet. Arrange the vegetable slices, alternating colors, on a baking sheet (here, I used a pattern of eggplant, green zucchini, yellow zucchini, tomatoes, and regular zucchini). Sprinkle with 1/4 teaspoon of salt and 3 twists of black pepper (about 1g), drizzle with 10ml of olive oil, and top with sprigs of thyme and rosemary. Cover and simmer over low heat for 10 minutes.

5、Remove the cover, sprinkle with cheese, and continue cooking over medium-high heat for 5-6 minutes until the cheese melts. Garnish with chopped parsley.

Flower Pizza
Pattern One
1、Lightly grease a skillet, place the pizza dough, and sprinkle with 150g of cheese. Cover the skillet, place hot coals on top of the lid, and bake for 10 minutes until the pizza crust edges turn golden brown. Remove from the skillet.

2、Spread 2 tablespoons of tomato sauce evenly, add cheese balls, cover the skillet, and place hot coals on the lid. Wait for 3 minutes, remove, and garnish with cherry tomatoes and basil leaves.
Oven/Air Fryer Reference: Preheat to 230°C and bake for 10 minutes, remove, add cheese balls, and bake for an additional 3 minutes. Adjust time according to your oven.
