Wasabi Garlic Prawns ( Macrobrachium rosenbergii – Giant River Prawn )

Ingredients:

1、500g giant river prawns ( Macrobrachium rosenbergii), trim the sharp points on the head, remove the legs, and butterfly by cutting along the back to devein.

2、Heat 4 tablespoons of cooking oil in a pan over high heat. Once hot, add the patted-dry prawns and pan-fry until golden brown on both sides.

3、Add 3 tablespoons of minced garlic and a knob of butter (approximately 20g). Stir-fry until the butter is melted and combined.

4、Pour in the sauce (2 circles of wasabi paste, 2/3 tablespoon of sugar, 2 tablespoons of light soy sauce, 1/2 tablespoon of oyster sauce, 1/3 tablespoon of salt, and 2 tablespoons of water, all mixed well).

5、Continue to stir-fry over high heat for 30 seconds. Sprinkle with 1 tablespoon of minced garlic and a handful of chopped scallions. Toss and remove from heat.
