Ingredients:

  • 3 tbsp tapioca starch

  • 1/2 tsp salt (for soup)
  • 500ml water

Scallion-Ginger Water:

  • 15g scallion sections
  • 15g ginger shreds
  • 1/2 bowl water

Instructions:

1、Marinate pork slices with tapioca starch, 1/3 tsp salt, white pepper, light soy sauce, and scallion-ginger water for 15 minutes

2、Heat 1 tbsp oil in pot, sauté dried shrimp, scallions, and ginger for 30 seconds until fragrant

3、Add loofah chunks and oyster mushrooms, stir-fry evenly

4、Pour in 500ml water, bring to boil over high heat

5、Add pork slices one by one to prevent sticking

6、When water reboils, add 1/2 tsp salt and cook for 1 more minute

    Bean Curd Stick and Mushroom Soup: An Easy Soup Recipe

    Ingredients:

    • 150g pork tenderloin, sliced
    • 4 eggs
    • 2 loofahs, peeled and cut into chunks
    • Fresh bean curd sticks or 80g dried ones (soaked 1.5 hours in warm water)
    • Assorted mushrooms (rehydrated deer antler mushrooms used)
    • 1 tbsp light soy sauce
    • 1/2 tbsp starch
    • 1 tbsp cooking wine
    • 1/3 tsp white pepper
    • 2/3 tsp salt
    • 600ml hot water
    • Goji berries and scallions for garnish

    Instructions:

    1、Marinate pork slices with light soy sauce, starch, cooking wine, and white pepper for 15 minutes

    2、Heat 2 tbsp oil in pan over high heat, fry 4 eggs until cooked through, then cut into chunks

    3、Pour 600ml hot water into pot, bring to boil, then simmer 2 minutes until broth turns white

    4、Add bean curd sticks (cut into 6cm pieces) and mushrooms, simmer 2 more minutes

    5、Add loofah chunks and pork slices, simmer 3 minutes

    6、Add 2/3 tsp salt, garnish with goji berries and scallions

      Ingredients:

      • 4 eggs
      • 100g shrimp
      • Assorted mushrooms (shiitake, seafood mushrooms)
      • Soft tofu, cubed
      • 1 tsp salt

      • 400ml boiling water
      • Scallions and goji berries for garnish

      Instructions:

      1、Heat oil in pan over medium heat, fry 4 eggs until golden brown, then cut into chunks

      2、Add more oil to pan, sauté shrimp until color changes

      3、Add mushrooms and fried egg chunks, then pour in 400ml boiling water

      4、Simmer for 8 minutes until broth turns milky white

      5、Add cubed tofu, simmer 3 more minutes

      6、Season with salt and white pepper, garnish with scallions and goji berries
