- 1 tbsp black vinegar
- ¼ tsp sugar
- ½ tsp Sichuan peppercorns
- Scallion oil (or 40g store-bought scallion sauce)
Steps:
1、Marinate the fish: Mix fish slices with cooking wine, cornstarch, soy sauce, and white pepper.

2、Blanch the fish: Boil water, add fish, and simmer until opaque (about 1-2 mins).

3、Assemble: Place blanched bok choy at the base, top with fish, then drizzle with soy sauce, vinegar, sugar, and peppercorns.

5、Finish with scallion oil: Heat oil, fry scallions until golden, discard scallions, then pour hot oil over fish.
