I first learned about Taiyaki from watching “Doraemon.” In the show, Doraemon loves Taiyaki so much that after finishing one, he uses a time-travel gadget from his pocket to rewind time to just before he ate it. This way, he can have an endless supply of Taiyaki.
Actually, to have an endless supply of Taiyaki, you don’t need to go through the trouble of time travel; a simple frying pan will do the trick.
The dark exterior has a slightly bitter taste that makes the sweetness inside even more appealing. The soft, chewy crust exudes a milky aroma, filled with a gentle, smooth red bean paste. When you break it open, it’s pliable yet firm, offering a tender texture with each bite.
Dipping it in hot milk warms you right to the core.
Ingredients:
- Low-gluten flour
- Eggs
- Fine sugar
- Milk
- Salt
- Baking powder
- Red bean paste
- Sweetened red beans
Preparation:
1、Beat 3 eggs, gradually adding 40g of fine sugar in three parts, whisking well after each addition to fully incorporate the sugar.
2、Mix in 45g of milk into the egg mixture until well combined.
3、Add 120g of sifted low-gluten flour, 1g of salt, and 2g of baking powder, mixing until there are no lumps. Let it rest; small bubbles will form on the surface.
4、Prepare a damp cloth, folded in half and set aside. Heat a non-stick frying pan over low heat to 70-80°C (about 4 minutes), then place the pan on the damp cloth. You’ll hear a sizzle as steam rises.
5、Pour an appropriate amount of batter into the center of the pan to form a nice circle. Return the pan to the stove, cook on low heat until the surface bubbles burst and set (about 3 minutes), then flip (preferably with a rubber or wooden spatula) and cook for another 10-20 seconds on low heat.
Note: Repeat steps 4 and 5 for each Taiyaki crust, using the damp cloth to lower the pan’s temperature to prevent burning or uneven heating.
6、Spread red bean paste on the lighter side of the cooked crust, add some sweetened red beans in the center, and cover with another crust.
