Dine Underwater at Norway’s Only Michelin-Star Restaurant Under

Dine Underwater at Norway’s Only Michelin-Star Restaurant Under

It may sound like a marketing gimmick—but it’s absolutely real. There are plenty of Michelin Guide-starred restaurants, and there are a few underwater dining spots around the world. But combining both into one extraordinary experience? That’s something only Under has achieved.

Located along the southern coast of Norway, this one-of-a-kind restaurant lets you enjoy fine dining while fish glide past your window and waves move gently beneath your feet. It’s not just a meal—it’s an immersive journey into the ocean itself.

A Restaurant Half-Sunken in the Sea

The name “Under” carries a double meaning in Norwegian: “below” and “wonder.” Both perfectly capture the essence of this architectural marvel.

Stretching 34 meters in length, the building is partially submerged, resting about five meters beneath the surface of the North Sea. Its concrete structure is designed to withstand powerful ocean waves and harsh weather conditions.

Over time, the rough exterior will transform into an artificial reef, attracting marine life such as shellfish and algae. In this way, the restaurant doesn’t just sit in the ocean—it becomes part of it.

Inside, diners are protected by thick concrete walls while enjoying a massive panoramic window measuring 11 meters wide and 3.4 meters high. It feels like looking through a giant periscope into a living, breathing underwater world.

Dining with the Ocean as Your View

Eating at Under is unlike any traditional restaurant experience. As you sit at your table, the ocean becomes your backdrop—constantly shifting with light, movement, and marine life.

Fish swim by as if performing just for you, while the changing colors of the sea create a calm, almost hypnotic atmosphere. It’s a rare moment where fine dining and nature blend seamlessly.

A Menu Inspired by the North Sea

The menu at Under is deeply connected to its surroundings. Ingredients are sourced from the North Sea and nearby regions—fresh fish, shellfish, and even seaweed take center stage.

The cooking style is clean and minimal, allowing the natural flavors of each ingredient to shine. Rather than overwhelming the palate, each dish celebrates simplicity and freshness.

Every bite feels like a direct connection to the ocean outside your window—pure, refined, and unforgettable. It’s a perfect example of how Nordic cuisine transforms local ingredients into something truly special.
